Thanksgiving Recipe: Brown Sugar Glazed Carrots

Needing to spice up one of your Thanksgiving dishes to win over the in-laws? We got you covered! 

Thanksgiving is a time for family, friends, and of course all about the wonderful food. And of course the side dishes are the star of the show! Everyone knows about the green bean casserole, the mashed potatoes, but sometimes you just want something DIFFERENT. Something colorful, roasted, and just adds some crunch. I’m talking about carrots of course!

Carrots contain so many wonderful nutrients including beta-carotene and plenty of antioxidants. These can help your immune system so you do not catch that cold from Aunt Susan. 

Carrots can be great raw or cooked, but it can be fun to spice it up a notch. Many kids like carrots so this can be a fun dish for them as well. It introduces them to different spices and cooking methods. 

Without further ado, here are the highly appraised Brown Sugar Glazed Carrots! 

Ingredients

  • 2 lbs Baby Carrots

  • 1/4 cup brown sugar

  • 1 stick unsalted butter (melted)

  • 1 tbsp olive oil

  • 2 cloves garlic minced

  • 1 tbsp dried thyme

  • salt & pepper to taste

Instructions

  • Preheat the oven to 400F. If you have regular carrots, cut them diagonally into halves. If they are baby carrots, you can leave them in their shape!

  • In a bowl, combine butter, olive oil, garlic, brown sugar, dried thyme, salt, and paper.

  • Arrange carrots in a single layer in a baking dish. Drizzle the butter mixture over it. Toss to combine everything. Roast for 15 min. After 15 min, toss and roast for another 10 minutes.

  • Serve warm!
